There are many reports in our pos software such as this sales traffic analysis that can give you almost an immediate picture of what day and times should be reviewed, for example here after 5 pm Mon to Wednesday. It is entirely possible that 5:30 pm would be a better time to stop.
Using this one of our clients shortened their shop hours by about 4 hours a week. What did surprise him though was how important the early morning was to his business, so they added a bit here.
It is not about working harder, it's more about working smarter.
